Sweet Cheese Pie


This is a Romanian cheese pie made using English ingredients by my wife Cleopatra. Words cannot describe how delicious it is! Simon Hensby aka Grey Olltwit

2 sheets of puff pastry

Butter (margarine) for greasing the pie dish

400g cheese (feta)

1 mug sugar

1 teaspoon vanilla flavour

2oz (57g) sultanas (you can use raisins as well)

4 tablespoons yogurt

6 eggs



Put the raisins or the sultana in a glass and cover with cognac or whisky. Keep them in it for about half an hour then rinse.

Grease an square ovenware pie dish. Put one of the sheets of puff pastry (I like the ones from Sainsbury's) on the bottom of the dish to cover all and up the walls of the dish.

Mix the cheese with the sugar very well till it feels like a creamy paste. Beat slightly 5 eggs separately then add to the mixture. Add the vanilla. Mix well. Add the sultana (raisins), mix.

Pour the whole mixture in the dish. Cover with the other sheet of puff pastry and stick together with your fingers (roll a little bit) the edges of the two sheets in such a way that the mixture is covered completely and sealed inside the pastry.

Beat the egg that was left together with the yogurt. Pour over the pastry and brush all over.

Bake in a heated oven at 200°C (400°F, gas mark 6) for 10 minutes then decrease to 170°C (325°F, gas mark 3) about 1 hour.

You may need to rotate the dish halfway through cooking. The pastry above should be golden brown towards brown when ready.
