Cheese Scones (About 12 scones)

8 oz (228g) self raising flour

2 oz (57g) butter or cake margarine

1 oz (28g) cheddar

Pinch of salt

½ teaspoon baking powder

1 leveled teaspoon (or less, according to taste) dry mustard

1 egg

3-4 tablespoons milk

Mix well flour, salt, baking powder, mustard and the butter. Then add the cheddar (keep some to put over the scones), mix well again. Add the milk and the egg.

You can moisten with more milk if needed to a light dough. Roll out about ½ inch (13mm) thick. Sprinkle with some of the grated cheese was left.

Grease a baking tray, put on the rolls and bake at once for about 20-25 minutes gas mark 3 (170°C, 325°F) (the oven has to be preheated).

You may need to rotate the tray halfway through cooking.
